They don't break or bend, they can slice through anything like butter and they're a beauty to behold. This video was filmed at Hirata Blacksmiths (平田鍛刀場) on the outskirts of Tokyo. Sukehira Hirata and Nodoka Hirata are a married couple who craft not only Japanese blades, but blades made of the rarest steel in Japan. The Difference Between German or Japanese Chef Knives | The Euge Food | This or That


Should I buy a German Knife or a Japanese Knife? Fair warning, this is only my opinion and this is only at the most basic level. If you are a full blown newbie, I would go for a German knife because they are cheaper and more durable and great to learn on. If you have been cooking for a while and are looking for an upgrade, go Japanese with the western finish. This means you will get most of the Japanese profiles without the rust and constant maintenance. If you plan on going the Japanese route, I would strongly recommend either getting a sharpening stone or finding a professional sharpener in your town. There is no point in spending money on an expensive knife without plan for maintenance. Kinda like buying a Ferrari with the intent of never seeing a mechanic. Knife Мaking. Making a Japanese Knife.


In this video, I'll show you how to make a Japanese knife - Kiritsuke from x12mf steel. Steel X12MF was created in the 30s of the last century as a tool alloy for cold deformation. This material remains in demand today. Outstanding wear resistance characteristics allow the raw material to be used in mass as well as serial production. Unfortunately, I do not have the opportunity to forge a knife, and therefore I use a blank for a knife made of x12mf steel. With the help of a grinder I form the outline of a knife. To harden a knife, I heat it up to 1100 degrees and immerse it after heating it in oil. and afterwards I put it in to oven for 2 hours at a temperature of 200 degrees. To make the handle of the knife, I use the Japanese traditional technique wa handle. The principle is to fix the knife handle with a dowel. I am not a Japanese knife expert because it takes years of practice to make. If you have any comments I will be glad to hear if you are really a specialist in the manufacture of Japanese knives. Knife Making - Kiritsuke || Japanese Kitchen Knife [EN] A chef ordered me a chef's knife, he wanted a raw forge effect on the blade and a mirror edge. The blade is C130 from 🤍Eurotechni in Thiers. The handle is made of stainless steel plate, red vg10, ebony and a pretty skull. Making this great chef's knife was not easy because the blade is a very carbon steel and the handle required patience because I couldn't glue everything in one go.
